Lemon Meringue Pie

 

Ingredients  

1 cup Sugar

1/3 cup Flour

¼ tsp Salt

1 ½ cup water

2 Egg Yolks

2 Tbsp Margarine

1/3 cup Lemon Juice

Topping

2Egg Whites

¼ cupSugar

Dash Salt

1 Fully Baked Pie Shell

Directions:

Mix the sugar, flour, salt and water and bring to a boil, mixing until thick. Beat egg yolks and mix in 1/3 cup of the hot mixture. Add to the pot. Cook and stir for 2 minutes. Add the margarine and Lemon Juice. Pour into crust.

Beat egg whites, add sugar and salt. Spoon over lemon. Bake @ 375 for 10 minutes, or until golden brown.
