Tri Color Pepper Asparagus Salad

  • 4 portabella mushrooms

  • 1 bunch asparagus

  • 1 red pepper

  • 1 yellow pepper

  • 1 orange pepper

    Dressing: 

  • 1 cup olive oil (⅓ cup)

  • ¾ cup vinegar (¼ cup)

  • 5 tbsp sugar (1 tbsp)

  • 1 tbsp salt (easy)

  • 1 tsp pepper

  • 1 clove of garlic crushed

  • Place the mushrooms and asparagus on a cookie sheet. Sprinkle with salt and pepper and grill for 5 to 7 minutes.

  • Slice the peppers and grilled mushrooms and asparagus into a bowl.

  • In another bowl mix together dressing ingredients.

  • Pour dressing over salad.
